  • Muddler (optional)

Place the sugar cube at the bottom of the glass and soak it with the bitters. Add a little water.

Tip: Water helps form a solution. Using syrup makes this step faster, but breaking the sugar is part of the ritual.

Crush the sugar with the muddler or spoon and stir until mostly dissolved.

Tip: It's fine if a few grains remain; this adds texture at the end of the sip.

Place the large ice block in the glass.

Tip: A large piece of ice has less surface area than many small ones, so it keeps the drink cold without quickly watering down the expensive whiskey.

Pour over the whiskey and stir for 30-40 seconds.

Spray the oil of the orange peel over the drink, wipe the rim of the glass with it, and drop it in.

Why isn't the sugar dissolving?
