Peel the kiwis and cut into smaller cubes. Peel the orange, removing the white pith as well, then separate into segments.

Tip: The white pith (albedo) can be bitter, so it is worth cleaning the orange flesh thoroughly.

Toss the fruits into the blender and crush them with short pulses.

Tip: Do not blend the kiwi for too long, as crushed seeds can release bitter substances, and enzymes will also break down proteins more aggressively. (Protease enzyme activity).

Pour in the cold kefir, honey, lemon juice and a pinch of salt. Blend with the machine just until you get a uniform consistency.

Tip: Add the dairy at the end so it doesn't warm up and the structure doesn't break down from the fast blades.

Place in the fridge to rest for 30 minutes, but make sure to consume it the same day.

Tip: Kiwi enzymes will eventually start to break down the kefir proteins, causing the drink to 'split' and become bitter if stored for days. (Enzymatic hydrolysis).

Recipe FAQ

Why did the smoothie turn bitter?
The enzymes in kiwi and crushing the seeds can quickly make dairy drinks bitter. Consume immediately after making, or do not blend the kiwi for too long!
Can I use carton orange juice?
It will be less aromatic than fresh fruit. The fibres of fresh orange also thicken the drink, which carton juice cannot replace.
