This cake brings the scent of winter afternoons. Honey not only sweetens but, due to its hygroscopic properties (absorbing water from the air), keeps the dough moist for days. The essential oils of the orange permeate the soft crumbs during baking.

Instructions

Preheat the oven to 180°C. Grease a cake tin.

Whisk the eggs with the honey and melted (but not hot) butter until frothy.

Mix in the sour cream, orange juice, and grated zest.

Fold in the flour mixed with baking powder. Mix only until combined.

Tip: Overmixing makes the sponge tough.

Pour into the tin and bake for approx. 40 minutes (test with a skewer!).

Recipe FAQ

The top got too dark.
Honey browns (caramelises) much sooner than sugar. If you see it darkening, cover with kitchen foil halfway through baking.
