- The top got too dark.
- Honey browns (caramelises) much sooner than sugar. If you see it darkening, cover with kitchen foil halfway through baking.

Preheat the oven to 180°C. Grease a cake tin.

Whisk the eggs with the honey and melted (but not hot) butter until frothy.

Mix in the sour cream, orange juice, and grated zest.

Tip: Overmixing makes the sponge tough.
