- Oven baking can dry it out. Put a small dish of water in the bottom of the oven to create steam.
Oven-baked lihapiirakka
Although original Lihapiirakka is deep-fried, the oven-baked version (uunilihapiirakka) is becoming more popular as a lighter alternative. Here the dough is not doughnut-like, but more like a fine, soft bread roll. The egg wash gives it that wonderful shine and colour that makes you want to bite into it immediately.

Knead the dough and prove for 1 hour. For the oven-baked version, you can make slightly softer dough.
Tip: Softer dough holds more steam during baking, so the crumb stays softer. (Hydration).

Prepare the meat filling in the usual way.
Tip: Here you don't need to dry out the filling as much as for deep frying; it can remain juicier.

Fill the doughs, place on a baking tray, and brush with beaten egg. Bake at 180°C for 25 minutes.
Tip: The proteins and sugars in the egg form a nice shiny layer under heat. (Maillard reaction).
