Mix the yeast and sugar in the lukewarm water, leave to rest for 10 minutes.

Tip: Sugar kickstarts the yeast reproduction.

Mix the flours and salt, add the yeast water and oil. Knead into a medium-soft dough.

Tip: If the dough comes away from the side of the bowl, the consistency is good.

Prove covered for 1.5 hours in a warm place.

Tip: Slower proving results in better flavour.

Shape into a loaf, brush the top with water, and sprinkle generously with pumpkin seeds. Press the seeds in a little.

Tip: Water acts as glue, and pressing ensures that the expanding dough during baking doesn't throw off the seeds.

Prove again for 20 minutes on the baking tray, meanwhile preheat the oven to 200°C. Bake for 35-40 minutes.

Tip: It is ready when tapping the bottom gives a hollow sound.

Tip: If you cut it warm, the inside may remain 'gummy' (sticky) because the steam hasn't escaped.
