Pizza Bismark

The pizza was named after Chancellor Otto von Bismarck, who supposedly loved eggs on every dish. This dish is a complete breakfast (ham, egg, bread) in pizza form. The key is timing: the white needs to cook, but the yolk must remain creamy to serve as a sauce for the bites.

Instructions

1

Preheat the oven to 220°C. Roll out the dough, spread with sauce, sprinkle with oregano.

Tip: The oven should be hot so the egg white sets quickly.
2

Add the ham and mozzarella, but leave 4 small "nests" (depressions) among the toppings for the eggs.

Tip: The nest prevents the egg from sliding off the pizza during baking.
3

Bake the pizza for 8-10 minutes, then pull out of the oven. Crack the eggs into the depressions.

Tip: If you put the egg on at the beginning, it will bake hard. Added at halfway, it will be perfect.
4

Return for 3-5 minutes until the white turns white but the yolk is still wobbly. Season the egg with salt and pepper, and serve with basil.

Tip: The yolk has a higher heat capacity, so it solidifies slower than the white, but you must keep an eye on it.

Recipe FAQ

Why did the egg run everywhere?
Egg white can be very runny. Crack it into a small bowl first, and gently slide it onto the pizza, or use a spoon to make a small depression for it in the cheese.
