Sacher waffles

If Sacher Torte and a waffle had a child, this would be it. The dense, cocoa batter is made regal by the acidity of apricot jam and the crisp chocolate coating. Not a light breakfast, but worth every bit of indulgence.

Instructions

1

Mix the dry ingredients (flour, cocoa, baking powder, sugar).

Tip: Sift the cocoa powder as it tends to clump!
2

Mix the egg with the milk and melted (but not hot) butter, then fold into the flour. Bake in the waffle iron.

3

Melt the chocolate together with the cream (ganache).

Tip: Do not boil the cream, just heat it, otherwise the chocolate may seize.
4

To serve, spread the waffle with jam and drizzle with chocolate.

Recipe FAQ

Why isn't it crispy?
The steam softened it. Place it on a wire rack to cool after baking, not a plate, so the steam can escape!
