Put the lavender in a tea infuser.

Tip: The tiny lavender petals are hard to strain out if they are floating freely.

Pour over the water and let stand for a maximum of 5 minutes.

Tip: Taste at 3 minutes. If intense enough, remove. Over-steeping results in a bitter and perfumed taste.

Remove the infuser and let cool slightly.

Tip: Tea that is too hot burns the tongue and masks the flavours.
