Cube tofu, and blot moisture thoroughly with kitchen paper.
Tip: Removing moisture is guarantee of crunch.

Prepare marinade: mix soy sauce, grated lime zest, crushed garlic, chilli powder and little olive oil. Toss tofu in it, and let stand 20 minutes.
Tip: Lime zest is rich in essential oils, giving perfumed aroma to dish without souring it.

Heat pan, and fry tofu until golden brown. Reserve leftover marinade.
Tip: Fry on medium-high heat to caramelise surface.

For tahini dressing, mix tahini smooth with lime juice, salt, pepper and enough water (approx. 2-3 tbsp) to get runny, creamy consistency.
Tip: Always add water bit by bit, as it dilutes suddenly.
