Cube tofu, and blot moisture thoroughly with kitchen paper.

Tip: Removing moisture is guarantee of crunch.

Prepare marinade: mix soy sauce, grated lime zest, crushed garlic, chilli powder and little olive oil. Toss tofu in it, and let stand 20 minutes.

Tip: Lime zest is rich in essential oils, giving perfumed aroma to dish without souring it.

Heat pan, and fry tofu until golden brown. Reserve leftover marinade.

Tip: Fry on medium-high heat to caramelise surface.

For tahini dressing, mix tahini smooth with lime juice, salt, pepper and enough water (approx. 2-3 tbsp) to get runny, creamy consistency.

Tip: Always add water bit by bit, as it dilutes suddenly.

On serving, drizzle fried tofu with tahini dressing, sprinkle with toasted sesame seeds and fresh coriander.

Tip: Toasted sesame seeds give texture, coriander gives freshness.

What if I don't have tahini?
You can substitute peanut butter (unsweetened type), although flavour character will be different, texture remains similarly creamy.
Tofu stuck to pan.
Pan probably wasn't hot enough, or you tried to turn it too soon. Wait until crust forms, then it releases from metal by itself.
