Spicy Mediterranean kefir drink

Kefir is a 'superfood' in itself, full of beneficial bacteria. However, when spiced, it becomes a complete refresher or dip. The capsaicin in paprika and pepper invigorates circulation, whilst the fat (kefir) helps the absorption of these and vitamins. Simple, quick, and much more exciting than plain yoghurt.

Instructions

1

Pour the kefir into a bowl. Mix in the salt, paprika, pepper and crumble in the oregano.

Tip: Crumble the dried herbs with your fingers to release the essential oils.
2

Let it stand for 10 minutes at room temperature or in the fridge for the flavours to meld.

Tip: Cold it is more refreshing, at room temperature the flavour is more intense.
3

Consume as a drink, or dip vegetables into it.

Tip: Excellent for marinating meats too, as the acidity of the kefir tenderises the fibres.

Recipe FAQ

Why is it hotter the next day?
Spice aromas dissolve into the fatty medium over time, so the flavours become more intense (maturation).
