Strawberry & cream muffins

Muffins are a textbook example of 'mixed batters'. The secret lies in mixing wet and dry ingredients separately, then combining them quickly. The fresh strawberries form little 'jam islands' in the baking batter, while the whipped cream cap elevates this simple cake into a dessert.

Instructions

1

Preheat the oven to 180°C. Line the tray with paper cases.

Tip: The paper helps prevent the batter from drying out from contact with the metal and makes removal easy.
2

Mix the dry ingredients (flour, sugar, baking powder, vanilla) in a bowl.

Tip: Even distribution of baking powder is critical, otherwise the muffins will be lopsided.
3

In another bowl, whisk together the egg, milk, and melted butter. Pour into the dry mixture and fold together with quick movements. DO NOT mix until smooth! It can remain lumpy.

Tip: The golden rule of muffins: the less you mix, the softer they will be. Overmixing activates gluten, making the batter rubbery and tough.
4

Fold in the strawberries (tossed in a little flour).

Tip: The flour coating prevents the wet fruit from sinking to the bottom.
5

Fill the cases 3/4 full. Bake for 20-25 minutes (skewer test). Leave to cool on a wire rack.

Tip: If you leave them in the tray to cool, the bottom will get soggy from its own steam.
6

Whip the cream with the icing sugar and pipe onto the cold muffins.

Tip: Only put whipped cream on completely cold cakes, otherwise it will melt off.

Recipe FAQ

Why did the muffin top peak?
You baked it at too high a temperature. The edges baked sooner than the middle, which then erupted upwards. 180°C is ideal.
