Heat the oil in the wok. Toss in the onion, crushed garlic and grated ginger. Fry for 1-2 minutes until fragrant, but do not brown too much.

Pour in the coconut milk, add the fish sauce, sugar and bruised kaffir lime leaves. Stir thoroughly.

Turn down the heat and simmer for 15-20 minutes. Halfway through (after about 10 minutes) add the pepper and carrot.

Tip: We add the vegetables later so they remain crunchy (al dente) and don't cook into a mush.
