Pour the cider (or juice) into a saucepan. Toss in the spices and citrus slices.

Tip: The essential oils in the citrus peels are released by the heat, adding freshness to the drink.

Heat on a low heat until it starts to steam. Do not boil!

Tip: If using cider, boiling will evaporate the alcohol. If using apple juice, you can boil it a little for more intense flavours.

Stir in the honey and let it stand on the heat (without boiling) for 10-15 minutes for the flavours to meld.

Tip: Add the honey at the end so its valuable nutrients aren't damaged by the heat.

Strain and serve hot.

Tip: Garnish the glass with a slice of fresh apple.

Can I use apple juice?
Yes, for the non-alcoholic version use 100% apple juice. If making it with alcohol, cider is the base.
