Wash the mint and clap the leaves once with your palms before placing them in the pot.

Tip: Physically 'breaking' the leaves ruptures cell walls, allowing essential oils to flow more easily into the water.

Pour over 80-90°C water and cover for 7 minutes.

Tip: Covering is important, otherwise the precious essential oils will evaporate with the steam.
