Fresh strawberry lemonade

Forget shop-bought soft drinks! This strawberry lemonade captures the true taste of fresh fruit in a glass. The secret lies in making a 'strawberry syrup': instead of just throwing the fruit into water, we purée it, so every drop of water takes on the strawberry's flavour and colour. A true summer classic that is not only thirst-quenching but also a table centrepiece.

  • Fine mesh sieve
  • Large jug

Wash and hull the strawberries, then place them in the blender with the sugar and half of the lemon juice.

Tip: The sugar helps break down the strawberry cell walls, releasing more juice.

Blend until completely smooth, then pass through a sieve.

Tip: Although the seeds are healthy, the drink will be silkier and more elegant without them. (Texture).

Pour the strawberry purée into the jug, add the remaining lemon juice and the water/soda. Mix well.

Tip: If using soda water, only top up immediately before serving to prevent the bubbles from going flat.

Tear the mint leaves and drop them into the drink.

Tip: Tearing along the leaf veins releases the essential oils, giving a more intense scent.

Fill glasses with plenty of ice and garnish with a whole strawberry each.

Tip: You can dip the rim of the glass in lemon juice then granulated sugar (frosting) for a professional look.
