Wrap tofu in kitchen paper, place a heavy object on it (e.g. chopping board + tin), and let press for 20 minutes.

Tip: Removing water is critical. Wet tofu will steam instead of fry, and won't get a crispy crust (inhibition of Maillard reaction).

Cut pressed tofu into 1-1.5 cm thick slices. Mix marinade ingredients (soy, honey, spices, oil, lime).

Tip: Add sesame oil at the end, as its intense flavour can dominate.

Toss tofu slices in marinade and let stand for at least 15 minutes.

Tip: The 'sponge effect' works here: tofu sucks up the flavours.

Remove tofu from marinade (reserve liquid!). Cook in hot griddle pan for 3-4 minutes per side until dark brown. Don't move unnecessarily!

Tip: Honey in the marinade burns easily, so work on medium-high heat and stay alert!

Boil the remaining marinade in a small saucepan until thickened.

Tip: Boiling concentrates flavours and caramelises sugars, creating a sauce consistency.

Serve tofu drizzled with thick sauce and sprinkled with fresh coriander.

Tip: Always add fresh herbs at the end, heat would destroy their aromas.

Why is the tofu sticking?
Because the pan wasn't hot enough, or you tried to turn it too soon. Wait until a crust forms, then it will release from the metal!
Can I use silken tofu?
No, it would fall apart on the grill. For this recipe, you need firm tofu.
