Many complain that tofu is tasteless. The secret? Tofu is a sponge. If it's full of water, it can't absorb flavours. That's why you need to press the water out to make room for this thick, sticky, umami-rich marinade that caramelises on it during cooking.

Wrap tofu in kitchen paper, place a heavy object on it (e.g. chopping board + tin), and let press for 20 minutes.
Tip: Removing water is critical. Wet tofu will steam instead of fry, and won't get a crispy crust (inhibition of Maillard reaction).

Cut pressed tofu into 1-1.5 cm thick slices. Mix marinade ingredients (soy, honey, spices, oil, lime).
Tip: Add sesame oil at the end, as its intense flavour can dominate.

Tip: The 'sponge effect' works here: tofu sucks up the flavours.
