Does the alcohol evaporate?
Most of it yes, but not 100%. The flavour remains, the intoxicating effect goes. Still, be careful with children.
How can I thicken it if too runny?
Reduction (boiling down) is the best method. If in a rush, mix a teaspoon of cornflour with a little water and add it.
