- When should I add the rosewater?
- Always at the END of cooking, once you've taken the syrup off the heat. High temperatures would evaporate the volatile aromatic compounds.
Rosewater scented melomakarona
This version brings a Middle Eastern (Levantine) influence to the Greek kitchen. The use of rosewater lends an incredibly elegant, perfumed aroma to the sweet, complementing the floral notes of the honey perfectly. The scent of rose and the freshness of orange create a true 'Arabian Nights' atmosphere. It is important to use rosewater sparingly: too much can make the dessert taste soapy; the goal is harmony, not dominance.

Instructions
1
✓
Boil the syrup from water, honey, and sugar for 5 minutes. Remove from the heat, and ONLY THEN stir in the rosewater. Cool completely.
Tip: Essential oils are heat-sensitive, so we add them last.
2
✓
Dissolve the bicarbonate of soda in the orange juice (it will fizz - acid-base reaction), then mix into the oil.
Tip: The resulting gas bubbles will enable the dough to absorb the syrup later.
3
✓
Add the flour and semolina, folding together with quick movements.
Tip: Do not over-knead, as gluten formation inhibits syrup absorption later.
4
✓
Shape into logs, pattern with a fork, and bake at 180°C for 25-30 minutes until golden brown.
Tip: During baking, the dough structure sets, but the pores remain open.
5
✓
Dip the hot biscuits into the cold, fragrant syrup for 30 seconds.
Tip: The vacuum effect (osmosis and capillary forces) draws the rosewater into the centre of the dough.
