An elegant autumn-winter cocktail that combines the homely taste of apple with the Italian fizz of Prosecco. It's not a classic cider (which is fermented apple wine), but a sophisticated mixed drink where the spiced apple base can be made in advance, and simply topped up with sparkling wine when guests arrive.

In a large jug, mix the apple juice with the sugar (if using) until dissolved.

Tip: You can help the sugar dissolve by warming a little apple juice, dissolving it in that, then pouring it back into the cold juice.

Drop in the lemon and orange peels (only the coloured part, the white pith is bitter!) and the rosemary sprigs. Place in the fridge for at least 1 hour.

Tip: This 'cold steep' (maceration) extracts the essential oils without cooking the flavours.

Strain the apple juice before serving to remove the spices.

Tip: This gives you an elegant, clear drink.

Top up with the cold Prosecco. Stir gently once, carefully.

Tip: Don't stir wildly, or you'll lose the bubbles (carbonation loss).
