Okonomiyaki pizza
Okonomiyaki (meaning: 'what you like, grilled') is the Japanese savoury pancake, pride of Osaka. This pizza transplants this flavour profile: instead of tomato, sweet-savoury Okonomiyaki sauce is the base, crispy cabbage hides under the cheese, and on top, bonito flakes (katsuobushi) dancing in the hot steam and lattices of Japanese mayonnaise form a spectacular finale.

Preheat the oven to 220°C. Shave the cabbage wafer thin, salt lightly, let stand for 5 minutes, then squeeze out the water.
Tip: The water content of the cabbage would soak the pizza if not squeezed out. Plus it cooks faster this way.

Stretch out the dough, place on the tray. Brush thinly with oil, then half the Okonomiyaki sauce.
Tip: The oil helps the dough stay crisp under the moist topping.

Sprinkle with half the mozzarella, then spread the squeezed cabbage loosely over it.
Tip: Don't compress the cabbage, keep it airy.

Sprinkle with the remaining cheese to hold it together.
