Okonomiyaki pizza

Okonomiyaki (meaning: 'what you like, grilled') is the Japanese savoury pancake, pride of Osaka. This pizza transplants this flavour profile: instead of tomato, sweet-savoury Okonomiyaki sauce is the base, crispy cabbage hides under the cheese, and on top, bonito flakes (katsuobushi) dancing in the hot steam and lattices of Japanese mayonnaise form a spectacular finale.

Instructions

1

Preheat the oven to 220°C. Shave the cabbage wafer thin, salt lightly, let stand for 5 minutes, then squeeze out the water.

Tip: The water content of the cabbage would soak the pizza if not squeezed out. Plus it cooks faster this way.
2

Stretch out the dough, place on the tray. Brush thinly with oil, then half the Okonomiyaki sauce.

Tip: The oil helps the dough stay crisp under the moist topping.
3

Sprinkle with half the mozzarella, then spread the squeezed cabbage loosely over it.

Tip: Don't compress the cabbage, keep it airy.
4

Sprinkle with the remaining cheese to hold it together.

Tip: The top layer of cheese protects the cabbage from burning.
5

Bake for 12-15 minutes until the cheese melts onto it and the dough is golden brown.

Tip: Watch the edges!
6

After baking comes the spectacle: drizzle with the remaining sauce and the mayonnaise (in thin stripes, latticed).

Tip: Kewpie mayonnaise is more tangy and creamy than European.
7

Sprinkle with the thinly sliced spring onion, and finally crown with the bonito flakes.

Tip: Serve immediately while the flakes are dancing!

Recipe FAQ

What is Okonomiyaki sauce?
Similar to Worcestershire sauce, but thicker and sweeter. Homemade: mixture of ketchup, Worcestershire, soy sauce and sugar.
Do the bonito flakes really move?
Yes! The wafer-thin shaved dried fish reacts to the steam of the hot pizza and begins to 'dance'.
