Although pizza is Italian, this version evokes the atmosphere of Spanish tapas bars. Chorizo is a paprika-spiced, cured sausage that releases its red paprika oil (pimentón) during baking, colouring and flavouring the entire pizza. The pepper and olives complete the Mediterranean trio.

Preheat the oven to 220°C. Roll out the dough and spread with the sauce.

Tip: Don't regret leaving the crust a little thicker so there is something to dip in the oil.

Scatter over the mozzarella, then arrange the thinly sliced chorizo and pepper on top.

Tip: Slice the chorizo thinly so it bakes until crisp (fat rendering).

Throw on the olives and drizzle with a little oil. Bake for 12-15 minutes.

Tip: The paprika fat stains the cheese a beautiful orange colour.

Garnish with fresh basil when serving.

Tip: The sweetness of the basil goes well with the spiciness of the sausage.

Can I use Hungarian sausage?
Yes, smoked sausage has a similar character, although the flavour profile of Spanish chorizo is slightly different (smokier paprika).
