Brew the coffee and immediately stir in the sugar or syrup.

Tip: Sugar crystals dissolve in seconds in hot liquid, whereas in cold liquid they would just settle at the bottom. (Solubility).

Fill the glass to the brim with ice cubes.

Tip: A full glass of ice ensures the drink stays cold throughout and the ice doesn't melt immediately.

Pour the cold milk over the ice.

Tip: This creates a 'bed' for the coffee and cools the medium.

Slowly, in a thin stream, pour the coffee over the ice cubes or the back of a spoon.

Tip: If you are skilful, the coffee and milk won't mix completely, creating a beautiful marbled or layered effect (density difference).

Garnish with whipped cream and a dusting of cocoa powder.

Tip: Stir before drinking.
