Sticky BBQ grilled tofu wraps

Tofu is boring to many, but only because they haven't treated it well. Tofu is a sponge: if you press the water out of it, it is capable of absorbing the characterful, smoky BBQ marinade. When grilled, the sugary sauce caramelises on its surface, creating a crisp, sticky crust. Wrapped up with fresh vegetables, it's a complete taste experience.

  • Heavy object (e.g. tin can): For pressing the tofu.
  • Griddle pan: For stripes and char marks.

Wrap the tofu in a tea towel/kitchen paper and place a weight on it for 15 minutes (pressing). Cut into 1 cm slices.

Tip: Removing water makes room for the marinade and helps it cook crispy.

Mix the BBQ sauce with the smoked paprika. Brush the tofu slices with it.

Tip: Smoked paprika deepens the BBQ flavour.

Cook the tofu in a hot, oiled griddle pan for 3-4 minutes per side until black grill marks appear on it. Cut into strips.

Tip: The sugar in the sauce burns quickly, don't leave it unattended!

Warm the tortillas through (so they don't break). Spread with mayonnaise.

Tip: The fat (mayonnaise) protects the dough from getting soggy.

Fill with lettuce, sliced onion, pepper and the tofu. Sprinkle with coriander, roll up.

Tip: The crunch of fresh vegetables is needed next to the soft tofu.

Recipe FAQ

The tofu fell apart on the grill.
The tofu wasn't firm enough, or stuck to the rack. Oil the rack and wait until a crust cooks onto it before turning!
