Suya is legendary street food from West Africa, especially Nigeria. The secret of these smoky, charcoal-grilled beef skewers is the spice mix called 'Yaji', the soul of which is ground peanuts (or kuli-kuli). This layer not only adds incredible flavour but forms a crunchy coating on the meat, protecting it from drying out. A true fiery dish, traditionally eaten at night by the roadside with fresh onions and tomatoes.

Grind the peanuts into a fine powder, but be careful not to turn it into peanut butter. Mix with paprika, cayenne pepper, ginger, garlic and onion powder, and salt. This is the Yaji spice.

Tip: If you grind too long, oil separates from the nuts creating a paste. Use pulse mode.

Slice the meat very thinly. Coat lightly with oil.

Tip: Easier to slice if you put the meat in the freezer for 30 minutes beforehand so it's firmer and doesn't slide.

Dredge meat slices in the peanut mixture, pressing firmly to coat thickly.

Tip: Oils in peanuts melt during cooking and 'fry' the spices onto the meat surface.

Thread meat onto soaked skewers accordion-style. Let stand for 20-30 minutes.

Tip: During resting, salt starts extracting moisture from meat, helping coating adhere.

Cook on a hot grill or griddle pan for 3-4 minutes per side until peanut crust browns and becomes crisp.

Tip: Don't move it much, let a crust form, otherwise spice falls off.

Serve with fresh red onion slices and tomato.

Tip: Freshness of raw vegetables (and onion sharpness) cuts through the peanut richness.

Unfortunately not, peanuts are the soul of Suya. Without them, you just have spiced meat, not Suya.
