Wash and sanitise all equipment thoroughly (e.g., with boiling water or sanitiser).

Tip: Hygiene is paramount! If foreign bacteria get in, you'll end up with vinegar, not cider.

Pour the apple juice into the fermentation vessel. Dissolve the sugar and salt in it by stirring thoroughly.

Tip: The extra sugar increases the alcohol content because the yeast has more 'food'.

Drop in the spices and the orange peel.

Tip: Spice flavours extract differently in an alcoholic medium than in water.

Sprinkle the yeast on top, then seal the vessel with the air lock.

Tip: Pour water into the air lock! This valve allows the CO2 produced to escape.

Place in a dark place at room temperature (approx. 20-22°C) for 7-10 days.

Tip: Watch the bubbles! If bubbling stops, the primary fermentation is complete.

Strain into clean, sealable bottles (leave the sediment at the bottom behind) and put in the fridge.

Tip: Chilling 'puts the yeast to sleep', stopping fermentation and clearing the drink.

Can the bottle explode?
If you seal it airtight during fermentation, YES! That is why you need the air lock, which lets gas out but keeps air out.
What yeast should I buy?
Cider or champagne yeast is best. Bread yeast will make it taste like bread, avoid it!
