Beef Rogan Josh
Rogan Josh is a rich dish of Persian origin, the pride of Kashmiri cuisine. The essence of the technique is 'bhunao', i.e., thorough frying of the meat and spices in fat, which results in caramelised, deep flavours. The characteristic red colour was traditionally provided by a special root, but today Kashmiri chilli does the job.

Heat the ghee and fry the onion in it until dark brown.
Tip: Deep browning of the onion gives the sauce its base flavour and colour (caramelisation). Don't burn it!

Add the meat and the spice paste (garlic, ginger, powdered spices), and fry for 10 minutes.
Tip: Searing the meat and frying the spices in fat releases the aromas (lipophilic compounds).

Tip: Reducing the temperature protects the yoghurt from curdling.
