- Why did it turn out dry?
- Either you overbaked it, or you added too much flour. Cornmeal is very absorbent.
- Why did the top crack?
- This is normal and desirable for cornbread! It's a sign of rapid volume increase.

Preheat the oven to 180°C (160°C Fan). Melt the butter and let it cool to lukewarm.
Tip: If you pour hot butter into the eggs, they will scramble.

Sift the flour, cornmeal, baking powder, salt, and sugar into a bowl.
Tip: Sifting loosens the flour and mixes in the baking powder, so the bread rises evenly.

In another bowl, whisk the eggs, then mix in the milk and melted butter.
Tip: Wet and dry ingredients must be prepared separately for the correct texture.

Pour the liquid into the flour mixture. Fold together with quick strokes, just until the flour disappears. Do not overmix!
Tip: If you mix too long, the gluten strands in the wheat flour strengthen, and the bread becomes rubbery and hard instead of crumbly.
