- You didn't press the edges together hard enough, or you put too much filling in. Brushing with egg white can help with sticking.
- Can I use tinned peaches?
- Yes, but drain them very thoroughly, as the juice will make the dough soggy.

Make the dough: mix the flour, sugar, salt, yeast, add the milk, eggs, vanilla. Once combined, knead in the soft butter.
Tip: We add the butter at the end so it doesn't inhibit gluten formation at the start. You'll get a silky, shiny dough.

Prove covered for 1 hour.
Tip: It will double in size in a warm place.

Mix the peach cubes with the jam.
Tip: If the jam is runny, boil it down a little beforehand.

Roll out the dough to half a cm thick. Cut out an even number of circles.
Tip: Flour the board so it doesn't stick.

Place a teaspoon of filling on half of the circles. Wet the edge, place an empty dough disc on top, and press together thoroughly.
