Peach doughnut

The taste of summer captured in a doughnut. This recipe combines classic filled doughnuts with the flavour of fresh peach. The dough is a rich, buttery yeast dough (brioche style), and the filling is a mixture of chunky peach and jam that bursts with every bite. A real treat.

Instructions

1

Make the dough: mix the flour, sugar, salt, yeast, add the milk, eggs, vanilla. Once combined, knead in the soft butter.

Tip: We add the butter at the end so it doesn't inhibit gluten formation at the start. You'll get a silky, shiny dough.
2

Prove covered for 1 hour.

Tip: It will double in size in a warm place.
3

Mix the peach cubes with the jam.

Tip: If the jam is runny, boil it down a little beforehand.
4

Roll out the dough to half a cm thick. Cut out an even number of circles.

Tip: Flour the board so it doesn't stick.
5

Place a teaspoon of filling on half of the circles. Wet the edge, place an empty dough disc on top, and press together thoroughly.

Tip: An airtight seal is key!
6

Rest the filled doughnuts for another 15 minutes.

Tip: This way they regain their shape after pressing.
7

Fry in 170°C oil for 3 minutes per side.

Tip: Fry slowly so the centre heats through but doesn't burn.
8

Dust with icing sugar when serving.

Tip: The icing sugar hides any imperfections.

Recipe FAQ

The filling leaked out, what did I do wrong?
You didn't press the edges together hard enough, or you put too much filling in. Brushing with egg white can help with sticking.
Can I use tinned peaches?
Yes, but drain them very thoroughly, as the juice will make the dough soggy.
