Clean the onion and slice into paper-thin rings or semi-circles.
Tip: Thin slicing is key, as the acid penetrates the vegetable structure faster, losing its rawness sooner (chemical cooking).

In a small saucepan, boil the vinegar, water, salt and honey together until the granules are completely dissolved.
Tip: The hot liquid opens up the onion fibres, so flavours penetrate the inside almost immediately (diffusion).

Place the onion, garlic and pepper in the sterile jar.
Tip: Do not stuff too tightly, so the liquid can circulate around the slices.

Pour the hot pickling liquid over the onion, seal, and let cool at room temperature.
