- Why is it flat and dense?
- You used too much flour, or the baking powder was old. Beating the eggs thoroughly also helps aeration.
- When should I flip it?
- When the top is matte and no longer runny, and the bottom is golden brown.
German Pancakes
German Pfannkuchen (or Eierkuchen in Berlin) sits somewhere between the thin French crêpe and the fluffy American pancake. Its batter is thicker, eggier, and often fried pan-sized, then served cut into wedges. They aren't rolled, but topped.

Instructions
1
✓
Beat the eggs with the sugar, vanilla, and salt until foamy (pale).
Tip: The air beaten into the egg acts as a mechanical leavening agent alongside the baking powder. (Aeration).
2
✓
Mix the flour with the baking powder. Alternately add the milk and flour to the egg mixture, mixing until lump-free. You should get a thicker batter than for Hungarian pancakes.
Tip: Don't mix with flour for too long, or the gluten network will become too strong, making the result chewy.
3
✓
Rest the batter for 10 minutes.
Tip: During resting, the baking powder activates and the flour hydrates.
4
✓
Heat a little fat in the pan over medium heat. Pour in enough batter to cover the bottom approx. half a cm thick.
Tip: Temperature is critical: if too hot, the bottom burns but the middle stays raw. Medium heat is your friend.
5
✓
Fry for 2-3 minutes until the bottom is golden brown, then flip and fry the other side until done. Repeat until batter is used up.
6
✓
Serve warm with apple sauce (classic German accompaniment), cinnamon sugar, or jam.
