The New Mexican Sopapilla is a 'pillow-like' treat: much airier and more hollow than its Chilean cousin. In the hot oil, it puffs up suddenly, forming a perfect pocket traditionally drizzled with the honey found on the table. The meeting of the hot, steaming pastry pocket and the cold, sweet honey is one of the Southwest kitchen's finest moments.

Thoroughly mix the dry ingredients (flour, baking powder, salt, cinnamon). Add the water and olive oil, then work into a smooth, elastic dough.

Tip: The freshness of the baking powder is especially important here, as this (and the steam) will puff up the pillows.

Rest the dough covered for at least 15 minutes. Meanwhile, prepare the honey: mix it with the lime juice.

Tip: The acidity of the lime cuts through the sweetness of the honey, giving a much fresher, zesty dressing.

Roll out the dough thinner than the Chilean version (approx. 3-4 mm). Cut into squares.

Tip: Thinner dough separates into two layers more easily during frying, forming the pocket.

Fry in plenty of hot oil. As you drop them in, gently splash or press the top of the dough under the oil with a spoon to help it puff.

Tip: The oil bath and heat shock turn the water in the dough into steam, forcing the layers apart.

Serve immediately, drizzling the lime honey over the hot pastry.

Tip: It is most delicious if you bite a corner off the pastry and drizzle the honey into the hollow inside.

Recipe FAQ

Why didn't it puff up?
Either you rolled it too thin, or the oil wasn't hot enough. Sudden heat shock is key for steam generation.
Can I use other sweeteners?
Honey is classic, but agave syrup is excellent if you want a vegan version.
