Wash the rice, then put it on to boil with the water, salt, and cinnamon stick. After boiling, reduce the heat to minimum.

Tip: Salt enhances sweet flavours; don't skip it!

Simmer covered for 45-50 minutes, stirring occasionally, until the rice breaks down into a thick porridge.

Tip: The water absorption (swelling) of starch molecules causes the thickening.

Add the milk and cook for another 10 minutes until you reach the desired creaminess.

Tip: Milk is added at the end to preserve its fresh taste and prevent it from boiling over.

Remove the cinnamon stick and stir in the honey. Serve with walnuts and fruit.

Tip: Add the honey at the end, as prolonged boiling would destroy its valuable properties.
