Japanese matcha green tea waffles

Matcha (finely ground green tea) adds not only a vibrant green colour but also a unique, earthy, slightly bitter flavour profile (umami) to the batter. This bitterness harmonises beautifully with the sweet honey and cream. Japanese confectionery strives for a delicate balance of textures and flavours, so this waffle is less sweet than its American counterparts, allowing the tea aroma to prevail.

Instructions

1

Sift the flour, matcha powder, baking powder, sugar and salt together into a bowl.

Tip: Sifting loosens the flour and distributes the matcha, giving you an even green colour.
2

Mix the eggs with the milk, melted butter and vanilla.

Tip: The fat (butter) coats the flour particles, inhibiting gluten formation, making the batter crumbly.
3

Pour the liquid into the dry mixture and mix until lump-free (but not for too long).

Tip: Here, exceptionally, aim for a smoother batter so the matcha doesn't stay spotty, but be quick.
4

Cook the waffles on a medium heat for 3-4 minutes. Be careful not to brown them too much!

Tip: The taste of matcha can become bitter if it burns.
5

Whip the cream with the icing sugar until soft peaks form.

Tip: In cold cream, the fat globules are harder, forming a more stable foam structure with air.
6

Serve the warm waffles drizzled with honey and with the whipped cream.

Tip: The floral aroma of honey highlights the flavour notes of the green tea.

Recipe FAQ

Why did the batter get lumpy?
Matcha powder tends to clump from humidity. Always sift it together with the flour before adding to the liquid!
The waffle turned brown, the green colour disappeared.
You cooked it at too high a temperature. Chlorophyll (green pigment) is heat sensitive. Cook at a lower temperature for a bit longer.
