Honey doughs (like gingerbread or honey cake layers) have a special property: due to the hygroscopic (moisture-retaining) nature of honey, they stay soft for days, even weeks. This pie combines the crumbliness of Linzer pastry with the durability of honey doughs. The apricot jam and walnut filling evokes Gerbeaud cake but in a simpler, more rustic form.

Divide in half. Roll out one half and place in the tray. Spread with jam, sprinkle with walnuts.

Roll out the other half and place on top. Prick with a fork.
