- All the cherries sank to the bottom.
- Unfortunately, this happens with heavier pieces. Roll them in a little flour before putting them in the dough so they 'grip' better.
- Can I use cocktail cherries?
- Yes, but they are less flavoursome, mostly just sweet. Quality candied fruit is a better choice.

Butter and sugar the ramekins. Quarter the cherries.

Prepare the base: mix the yolks with the sugars, add the cherries. Heat the milk.
Tip: If you add the cherries here, their sugar coating melts slightly from the milk, flavouring the cream.

Melt the chocolate with the butter, stir into the egg mixture. Add the flour, then the warm milk, and thicken over the heat.
Tip: Be careful not to let the sugary cherries burn on the bottom of the pan while stirring!

Whisk the egg whites and fold into the mixture.

Fill the moulds. You can garnish the top with whole cherries.

Bake at 180°C for 20-25 minutes.
Tip: Due to the dark colour of the chocolate, it's hard to see the browning; watch the smell and the rise.
