Dissolve the honey in the Calvados in a small glass.

Tip: Honey dissolves more easily in alcohol than in cold cider.

Fill the glasses with ice and toss the apple slices in between.

Tip: Layer it: ice, apple, ice, apple. This makes it more visually appealing.

Pour the honeyed Calvados over the ice.

Tip: Chill the alcohol.

Top up with cold cider and stir gently with the cinnamon stick.

Tip: Use the cinnamon stick as a 'spoon', it flavours as you stir.

What is Calvados?
It is a French, protected designation of origin apple brandy. If you don't have it, you can substitute it with good quality apple brandy, though the taste will be rawer.
The drink is too strong.
Use more ice and cider, and halve the Calvados. This is a cocktail; proportions can be adjusted to taste.
