Tip: Use fresh fruit because essential oils from the peel also scent the juice during squeezing.

If you want a silkier drink, strain the juice through a fine sieve, pressing out the pulp with a spoon.

Tip: Removing pulp gives a more elegant texture, but leaving it in makes the drink more nutritious.

Why is the juice bitter?
Naringin in grapefruit causes bitterness, which is found mainly in the white membranes. If you juice carefully, less gets into the juice.
