Not a simple milky coffee, but a texture play where the light foam prepares the palate for the full taste of coffee. The secret lies in milk proteins: under heat and aeration, they form an elastic network that traps air bubbles.

Brew the coffee using your favourite method (moka pot, espresso machine), and immediately stir in the sugar.

Tip: Sugar dissolves in moments in hot coffee; no need to ruin the foam later with stirring.

Heat the milk to approx. 60°C (when it just starts to steam but not boil).

Tip: Milk sugar (lactose) tastes sweeter at this temperature, making the drink more harmonious.

Froth the milk until its volume increases and you get a thick cream with tiny bubbles.

Tip: 'Microfoam' is the goal, not large bubbles. If you see large bubbles, tap the bottom of the jug on the table to pop them.

Pour the coffee into the glass, then slowly pour in the hot milk, saving the foam for the end.

Tip: If you do it skilfully, the milk mixes with the coffee, but the foam stays on top (layering).

Spoon the remaining thick milk foam on top like a 'cap'.

Tip: The foam also insulates the coffee, keeping it warm longer.

Sift cocoa powder on top for decoration.

Tip: The bitterness of cocoa provides an exciting contrast to the sweetness of the milk.

Recipe FAQ

Why does the foam collapse?
The milk might be too low in fat, or you overheated it. Above 65°C, the protein structure in milk collapses, and the foam becomes unstable. 2.8% or 3.5% milk is the best choice.
