- Why does the foam collapse?
- The milk might be too low in fat, or you overheated it. Above 65°C, the protein structure in milk collapses, and the foam becomes unstable. 2.8% or 3.5% milk is the best choice.

Brew the coffee using your favourite method (moka pot, espresso machine), and immediately stir in the sugar.
Tip: Sugar dissolves in moments in hot coffee; no need to ruin the foam later with stirring.

Heat the milk to approx. 60°C (when it just starts to steam but not boil).
Tip: Milk sugar (lactose) tastes sweeter at this temperature, making the drink more harmonious.

Froth the milk until its volume increases and you get a thick cream with tiny bubbles.
Tip: 'Microfoam' is the goal, not large bubbles. If you see large bubbles, tap the bottom of the jug on the table to pop them.

Pour the coffee into the glass, then slowly pour in the hot milk, saving the foam for the end.
Tip: If you do it skilfully, the milk mixes with the coffee, but the foam stays on top (layering).
