Mushroom & Swiss style burger

Mushroom is the 'meat' of the plant world: full of umami (the fifth taste), and its texture reminds of it too. In this recipe, mushrooms sautéed in butter amplify the beef flavour, and melted cheese binds them together creamly. Inspired by the classic known as 'Swiss Mushroom Burger'.

Clean and slice the mushrooms. Melt butter over medium-high heat, throw in the mushrooms. Don't stir constantly! Let them brown.

Tip: If you let them brown, the mushroom loses water, and flavour concentrates (brown Maillard bits).

When mushrooms are golden brown, season with salt and pepper. Remove and set aside.

Tip: Salt draws out water, so we only salt at the end of frying.

In the same pan fry the seasoned patties until done (3-4 minutes per side). Melt cheese on top at the end.

Tip: The meat picks up the mushroomy butter flavour remaining in the pan.

Toast the buns. Slice the vegetables.

Tip: Freshness of vegetables balances the 'heaviness' of mushrooms and meat.

Assembly: Mayonnaise bun, lettuce, meat with cheese, abundant portion of sautéed mushrooms, tomato, onion. Ketchup to taste.

Tip: Pile mushrooms onto the cheese so the cheese 'holds' them, and they don't fall out.

Recipe FAQ

Why did the mushrooms get watery?
Mushrooms have high water content. If you put too many mushrooms in the pan at once, it cools down and they start stewing. Fry in small batches, on high heat, and salt only at the end!
Should I wash or peel mushrooms?
Never soak in water, as they soak it up! Just wipe with damp kitchen paper or brush them.
