Black sesame bingsu

Bingsu is more than a slush puppy: it is 'snowflake'. The ice is shaved so finely that it melts instantly on the tongue. The nutty, earthy flavour of black sesame (kurogoma) and the sweetness of condensed milk are a classic Asian pairing.

Allergen Information

⚠️ Milk
⚠️ Sesame

Instructions

1

Mix the sesame paste with the milk to thin it out so it's pourable.

Tip: If grinding sesame seeds yourself, toast them beforehand to release their oils, and grind with sugar until creamy.
2

Melt the chocolate.

3

Shave the ice to a snowflake consistency.

Tip: Work immediately, as it melts quickly and clumps together.
4

Pile the ice into a bowl. Drizzle over the condensed milk (this sweetens the ice).

5

Pour over the sesame cream and the chocolate, and sprinkle with the seeds.

Tip: Thick toppings don't run to the bottom immediately, but coat the ice crystals.
