- When should I pick elderflowers?
- On a sunny morning, when the dew has dried but the sun is not yet scorching. This is when the concentration of pollen (and thus fragrance) is highest.
- Should I wash the flowers?
- Just gently shake out any bugs! If you put it under water, you wash out the precious pollen that gives the flavour. If it is very dusty, just dip it briefly in water.
Honeyed elderflower liqueur
Elderflower is the symbol of late spring, its pollen emitting a distinctive, muscat-like scent. In this liqueur, the honey used instead of (or alongside) sugar adds depth and floral complexity to the drink, which resonates perfectly with the elderflower character. This drink moves on the border between herbal medicine and pleasure: in folk medicine, elderflower is recommended for colds, but consumed as a liqueur, its soul-warming effect prevails.

- Fine sieve and cheesecloth/muslin

Shake out the elderflowers, trim off the thick green stems (these can be bitter), and place the flowers in the clean jar.
Tip: The green parts may contain small amounts of cyanogenic glycosides, which give an unwanted taste, so trimming the 'umbels' is important.

Grate the yellow zest of the lemon over it, then squeeze in its juice as well.
Tip: The acid helps stabilise the flavours and prevents the flowers from browning quickly (oxidation).

Drizzle the honey over it. If the honey is too thick, warm it slightly (max 40°C) to make it runny.
Tip: Honey dissolves less easily in alcohol than sugar, so it is important for it to be liquid.

Pour over the vodka (and water, if you want it weaker). Seal and shake thoroughly.
Tip: Alcohol preserves and extracts the flavours.

Place in a sunny, warm spot (windowsill) for 3-4 weeks. Turn the jar daily.
Tip: With elderflower - unlike other liqueurs - heat (sun exposure) helps maturation, similar to fermented cucumbers or elderflower cordial.

Strain twice: first through a sieve, then by squeezing through a dense cloth. Fill into bottles.
Tip: Sediment-free liqueur looks appetising and does not spoil.

Chill before serving. Excellent on its own or topped up with prosecco (Hugo cocktail base).
Tip: The longer it stands in the bottle, the darker and deeper the flavour becomes.
