Pizza Finlandese

This pizza was born from a culinary diplomatic scandal in 2008, when the Italians looked down on Finnish cuisine. In response, the Finns created 'Pizza Berlusconi', which won the world championship. The secret is the smoked reindeer meat, red onion and earthy flavour of chanterelles, which works surprisingly well on the crispy rye dough. We forget tomato sauce here: a sour cream base highlights the Nordic flavours better.

Switch the oven to maximum (250°C+), and put the baking tray or pizza stone in to warm up.

Tip: The hot surface shocks the dough, causing the bubbles inside to grow suddenly – this makes the crust airy.

Stretch the dough out by hand. Do not use a rolling pin, as it presses the air out of the dough.

Tip: Leave the edge thicker (cornicione).

Spread the dough with the sour cream, scatter over the mozzarella.

Tip: The sour cream base is fattier than tomato, so spread thinly so the dough doesn't get soggy.

Place the paper-thin red onion and torn meat/mushrooms on top.

Tip: It is worth hiding the onion under or between the cheese a little so it doesn't burn from the high heat, but steams instead.

Slide onto the hot stone/tray, and bake for 8-10 minutes until the crust is blistered and brown.

Tip: Watch constantly, it can burn suddenly due to the high heat!

Immediately after baking, sprinkle with fresh thyme and drizzle with a little oil.

Tip: The hot steam brings out the scent of the herb.

Where can I get reindeer?
It is hard to find here. Substitute with good quality smoked venison ham or thinly sliced smoked beef (pastrami).
Why is the dough rye?
The basis of Finnish bread culture is rye. It gives a denser, more characteristic flavour than plain wheat flour.
