Brew the coffee and pour into the bottom of the glass (or set aside if you want to layer it).

Tip: The 'body' of the espresso provides the base of the drink. If the coffee is too weak, the flavours get lost in the milk.

Heat the milk with the vanilla, cinnamon and nutmeg. Do not boil, just let it steam.

Tip: The sugars in milk (lactose) are sweetest at about 60 degrees. If you boil it, this sweetness is lost and it tastes like 'boiled milk'.

Stir the caramel syrup into the warm milk.

Tip: Adding the syrup to the milk gives a more even distribution than putting it in the coffee.

Froth the milk until you get a thick, creamy consistency.

Tip: Microbubbles make the drink silky. Large bubbles burst quickly (foam stability).

Pour the frothed milk into the coffee. (Or vice versa: milk in the glass, and pour the coffee in to layer).

Tip: Layering is spectacular, but before drinking you have to stir anyway for flavour harmony.

I don't have caramel syrup, what should I do?
You can make quick 'caramel milk' by melting a little brown sugar at the bottom of a saucepan, then carefully pouring in the milk. Be careful, the sugar is very hot!
What milk should I use?
2.8% or 3.5% (whole) milk produces the most beautiful, longest-lasting foam. Among plant milks, barista oat milk works best.
