Strawberry & basil mocktail with cider

Wash the strawberries and cut them into quarters. Place them at the bottom of the jug.

Tip: Choose ripe, soft strawberries; they are easier to work with.

Add the lemon juice and honey, then lightly crush the strawberries with a wooden spoon or muddler.

Tip: You don't need to purée them, just crush them enough to release their juice and aromas.

Place the basil leaves in your palm, clap your hands together once, then drop them into the jug.

Tip: Clapping breaks the leaf structure without crushing and blackening it, releasing the essential oils.

Pour over the cider and mix gently. Let it stand for a few minutes.

Tip: This short rest (maceration) allows the flavours to meld.

Immediately before serving, pour in the soda water and add the ice.
