Dill & cucumber yoghurt dip

Although known to many as Tzatziki, this version places emphasis on freshness. The key moment here is 'dewatering'. Cucumber is mostly water, which, if left in, dilutes the creamy yoghurt over time, giving us tasteless soup instead of sauce. With the help of salt, we extract this excess water, so the cucumber flavour remains concentrated and crunchy.

Wash cucumber, (if skin is thick, peel it), and grate on coarse grater.

Tip: Worth scraping out seeds before grating, as they contain most water.

Salt grated cucumber thoroughly (approx. half teaspoon salt), mix, and let stand for 10 minutes.

Tip: Salt draws water out of plant cells via osmosis.

Meanwhile grate garlic and finely chop dill.

Tip: Grate garlic into yoghurt, acidic medium tames its strength slightly.

Grab a handful of cucumber, and squeeze juice out in your palm (or clean tea towel) as hard as you can. Discard juice.

Tip: The drier the cucumber, the creamier the sauce remains.

Mix squeezed cucumber into yoghurt, add dill, garlic, lemon juice and pepper.

Tip: Yoghurt fat locks in flavours.

Taste! Likely needs no more salt, as cucumber remained salty.

Tip: Only add extra salt if really necessary.

Place in fridge for 15 minutes before serving.

Tip: Most delicious cold, as contrast to roasted meats.

Too salty.
You might want to rinse cucumber slightly after salting if you used a lot of salt, but best is to add salt carefully to yoghurt.
Can I use dried dill?
Yes, but flavour is much less intense. Use less, and let sauce stand for longer.
