Cut the beef into thin slices (easier after freezing). Mix the marinade ingredients (soya sauce, sugar, sesame oil, ginger, crushed garlic, gochujang).

Tip: Sesame oil has a low smoke point, but due to the sugar in the marinade you have to be careful with heat anyway.

Coat the meat in the marinade and rest in the fridge for 30 minutes.

Tip: During resting the salt penetrates between the fibres.

Separate the lettuce leaves, wash thoroughly, then drain or spin completely dry.

Tip: It is important the lettuce is dry, otherwise water cools the hot meat and the wrap gets soggy.

Slice the onion. Heat oil in a pan, throw in the onion, fry until translucent.

Tip: The sugar content of the onion caramelises and becomes sweeter.

Add the meat with the marinade. Fry on high heat, stirring/shaking constantly, until the meat browns and is coated in sauce.

Tip: Spread the meat in the pan so it has maximum contact with the hot metal.

Sprinkle the finished meat with sesame seeds toasted in a dry pan until fragrant.

To serve, put the meat in a bowl, the lettuce leaves on the side. Everyone makes their own parcels: a leaf, a little meat, then fold up and eat in one bite.

Tip: This strengthens the communal dining experience.

Recipe FAQ

What lettuce should I choose?
Romaine, Iceberg or Butterhead are all good, the main thing is the leaves should be big enough for wrapping.
Gochujang is too spicy, what can I substitute?
You can use a milder chilli paste, or even leave it out, but add a little paprika for colour.
