Mojito

Cuban sailors originally drank the 'Draque' (the ancestor of the Mojito) as medicine against scurvy. The secret of today's version is balance: the acidity of the lime, the sweetness of the sugar, and the freshness of the mint meet in such a way that none overpowers the rum. It is not shaken, but 'built', where layers and textures play a role.

Place the sugar and lime wedges in the bottom of the glass. Press them with the muddler so the lime releases its juice and the sugar begins to dissolve.

Tip: The abrasive action of the sugar crystals helps extract the fragrant oils from the lime zest.

Drop in the mint leaves. Just press them 1-2 times with the muddler. Do not crush them to pieces!

Tip: Always add the mint after the lime so the acidic juice protects the leaves from browning (oxidation).

Fill the glass to the brim with ice.

Tip: Lots of ice melts slower, keeping the drink cold without diluting it too quickly.

Pour over the rum, then top up with soda water.

Tip: The bubbles in the soda help lift the aromas to your nose.

Reach down to the bottom of the glass with the bar spoon and gently lift the contents to mix the sugary-lime juice with the soda and rum.

Tip: Don't stir wildly, or you'll lose the bubbles. The goal is just to merge the layers.

Recipe FAQ

Why is my Mojito bitter?
There could be two reasons: either you crushed the mint too hard (chlorophyll), or you pressed the white pith of the lime as well. Treat the ingredients gently!
Can I use brown sugar?
The original Cuban recipe uses white cane sugar for a clean taste, but brown sugar gives it a deeper, caramel-like flavour. It's a matter of taste.
