Boil the water and pour it over the linden flowers. Let steep for exactly 5-7 minutes, then strain.

Tip: Linden flowers contain mucilage. If steeped too long, the texture of the tea can become gloopy, which is not desirable in this cocktail.

Pour the cider into the saucepan, add the cinnamon and nutmeg. Heat over medium heat until steaming (approx. 70-75°C).

Tip: The spice aromas dissolve faster in warm liquid (extraction), but boiling would 'cook away' the flavours.

Pour the prepared linden tea into the warm cider and keep warm for another 2-3 minutes to allow the flavours to meld.

Tip: The tea dilutes the alcohol and softens the intensity of the apple.

Remove from the heat and stir in the honey and lemon juice.

Tip: The acidity of the lemon clarifies the drink and balances the sweetness of the honey. Taste and adjust the balance!

Tip: Only spoon it on top immediately before consumption, as the hot, acidic drink can quickly curdle milk proteins.

Can I boil it?
Strictly forbidden! Above 78°C the alcohol begins to evaporate, and the valuable enzymes in the honey are destroyed, making the taste 'flat'.
