Preheat the oven to 230°C. Slice the spring onions into thin rings, and cut the cucumber into matchstick-thin strips (julienne).

Tip: We only add the cucumber raw at the end to keep it crisp!

Roll out the pizza dough and place it on a baking tray. Brush thinly with olive oil, then with the hoisin sauce.

Tip: Hoisin sauce has a high sugar content and burns easily, so don't spread it right to the very edge.

Sprinkle with the mozzarella, then distribute the shredded duck meat over it (skin side up if possible).

Tip: If the skin faces up, the hot air will make it crispy again. [The fat under the skin melts and 'fries' the skin.]

Bake for 10-12 minutes until the cheese is bubbling and the crust is golden brown.

Tip: Keep an eye on the sauce; if it starts to blacken, take it out!

Remove from the oven. Immediately sprinkle with the fresh cucumber strips, spring onions, and sesame seeds.
