Satay-style peanut & sesame sauce

This sauce is an 'umami' (the fifth taste) bomb. The sweetness of peanut butter, the salty depth of soy sauce, the acidity of rice vinegar and the heat of chilli meet in a perfectly balanced emulsion. Although many only know it alongside spring rolls, it is actually a universal 'lifesaver' in the kitchen: it turns simple boiled noodles or steamed broccoli into a restaurant dish in minutes.

Toast the sesame seeds in a dry frying pan for a few minutes until fragrant and they start to pop.

Tip: Toasting brings out the nutty flavour of the seeds. Be careful, because after popping they burn quickly!

Grate the garlic to a fine paste.

Tip: Since we aren't cooking the sauce, large pieces of garlic would be unpleasant.

In a bowl, mix together the peanut butter, soy sauce, sesame oil, vinegar, honey, garlic and chilli.

Tip: At this stage the mixture might be very thick and lumpy, don't panic.

Gradually add the warm water, a tablespoon at a time, while whisking continuously.

Tip: The warm water helps to dissolve the fat in the peanut butter. You will see the thick mass suddenly change into a creamy sauce (emulsion).

Finally, stir in the toasted sesame seeds.

Tip: If putting on noodles, make it thinner; if for dipping, keep it thicker.

Recipe FAQ

It became too thick, almost concrete-hard. Why?
Peanut butter absorbs a huge amount of water. In this case, feel free to add more water or a little coconut milk until you reach the desired consistency.
Can I use crunchy peanut butter?
Yes, indeed! 'Crunchy' peanut butter adds extra texture, which suits this sauce very well.
